Raw produce is really good for our body cells. Now, with summer time around the corner, we have a great excuse to indulge ourselves in the great variety of fruits and vegetables that this season offers us. Here is a healthy salad you can prepare for your family in the blink of an eye on those occasions when you feel like staying away from the kitchen as much as possible or when people show up unexpectedly at your door on a summer evening. I’ll bet you anything that your family or guests will be really impressed at your culinary arts.
Grapefruits stuffed with shrimp and avocado
Grapefruits are low in calories and rich in vitamin C. They are depurative and antioxidant, enhance the immune system and help prevent colds caused by seasonal changes.
Makes 4 servings
2 grapefruits
60 grams of green and red salad
1 ripe avocado
80 grams of cooked and peeled shrimp
parsley, minced
extra virgin olive oil
juice of one lemon
salt and pepper to taste
Cut in half the grapefruits, take out the flesh with a spoon and cut it in small pieces. Peel the avocado, cut it in small cubes and sprinkle it with lemon juice so it doesn’t get dark.
Wash the salad leaves; place them in a large bowl and season them with olive oil, lemon juice, minced parsley, salt and pepper (optional). Mix them well with the avocado, the grapefruit flesh, and the shrimp. Place the mixture in the grapefruit peels. And enjoy it!
